Paul Easson takes the lead as Executive Chef at new Gowings Bar & Grill

QT Sydney has announced the appointment of Paul Easson as Gowings Bar & Grill’s Executive Chef. In this role, Easson will oversee the culinary operations of the restaurant which is set to open in September this year, alongside the much anticipated grand opening of the QT Sydney hotel.

Easson will join Robert Marchetti, who was last week announced as the Creative Food Director. They will work collaborate in designing the a la carte menu for breakfast, lunch and dinner, while a dedicated in-room menu will be serviced throughout guests stay.

Most recently, Easson was the Executive Chef of Rockpool Bar & Grill in Melbourne. A staple fixture at the restaurant since its opening six years ago, Easson moved from Sydney to launch the push into Melbourne as assistant to then Executive Chef, Khan Danis.

Paul Easson has over 20 years experience in Australia, London and Japan kitchens working alongside notable chefs including Tony Bilson and Neil Perry.

Easson is not out to re-invent the wheel but to sharpen and reinvigorate old classics. Simple modern foods team with clean flavours will be driven by quality produce – an unpretentious menu that Easson will jointly create with Robert Marchetti.

The concept of the Gowings Bar and Grill restaurant is brasserie in style with a strong focus on wood-fired crustacea and seafood. The 120-seat restaurant is forecast to be one of the biggest restaurant openings of 2012.

Diners of Gowings Bar & Grill will be treated to a ring side seat to the best of Sydney’s markets. With whole tuna and an array of menu driven seafood on display, Marchetti and Easson have hand chosen a selection of artisan producers and suppliers to be showcased in the kitchen.

The restaurant is part of QT Sydney, a new hotel concept by one of Australia’s premier entertainment, hospitality, tourism and leisure companies. Melding between two of Sydney’s grandest and most prominent historical buildings, QT Sydney (located between the Gowings building and State Theatre) will be the city jewel of the QT crown.
