Melbourne Hotel Dining Redefined by QT’s Andy Harmer

QT Melbourne is excited to introduce Executive Chef Andy Harmer’s new culinary direction.  After making a significant impact on Melbourne’s food scene, Andy is bringing his individual touch to QT Melbourne’s restaurants and bars.

With a new menu unveiled this week, the restaurant will hero the modern day bar and grill concept that has underpinned the QT Hotels dining experience.  Staying true to QT’s energetic and playful style, Harmer’s direction will couple the freshest and finest ingredients with a commitment to celebrating locally sourced produce.

Drawing on his extensive culinary skills and experience (Vue de Monde, The Point, and D.O.M), the Pascale Bar & Grill menu will be divided between raw, entrées, grill, josper, rotisserie, sides and dessert – the menu will include signature dishes of:

  • Grilled calamari, burnt cucumber, quinoa and finger lime
  • Cured kingfish, green strawberry and kombu oil
  • Roasted dry-aged duck, honey and lavender
  • 4kg Ranger Valley bone in rib, NSW
  • WA wood-fired marron, chorizo blanc and desert lime

Guests will leave on a high note after savouring the selection of inventive desserts that showcase different flavours and textures designed to excite.  Indulge in choices such as Fig Soufflé with Pistachio Ice Cream or a delightful mix of Alpine Strawberry, Eucalyptus and Chocolate.

Inspired by time spent at international restaurants and acclaimed Australian venues, Andy will also redesign and cultivate the rooftop garden to demonstrate his commitment to sustainability and to foster a culture where the restaurant team have a clear understanding of produce ‘from the garden to the plate’.

“There is something incredibly rewarding about picking produce straight from the root, and on your own doorstep.  I’m really excited about showcasing just how much can be grown locally, and empowering my team to utilise and share their knowledge of the local environment,” said Andy.

Harmer’s appointment reflects the essence of QT Hotels & Resorts as it continually challenges the status quo, with landmark drinking and dining destinations and the celebration of creativity for all that stay, play and dine.
