GILT LOUNGE UNVEILS A STELLAR NEW COCKTAIL MENU THAT UNITES ADAPTED OLD CLASSICS AND EXPERTLY CRAFTED NEWCOMERS

Located on the second level of Gowings Bar & Grill at QT Sydney, Gilt Lounge’s moody interior and bespoke furniture sets the perfect backdrop to the diversity of the bar’s recently revamped cocktail menu, which showcases a savvy selection of hotly curated new concoctions.

Whether it’s classic old favourites or a twist on tradition, the new menu stirs up a bevvy of sweet and sour sippers that have been exciting and delighting since the menu’s unveiling this month.

Utilising an extensive cellar of liquor and instilling local ingredients, the recipe masterminds of the QT Sydney bar team alongside Jared Thibault, QT’s Group Manager of Beverage have prepped the signature cocktails menu to perfection to present a cool, creative and original list of tempting drinks that are sure to keep the punters coming.

“The Seasonal Gilt cocktail list is a refreshing take on some of the most popular classics from around the world using today’s latest innovation and local ingredients all curated from our expert bar team,” says Jared.

Presenting a small snippet of the 21-strong list, one of the top new additions is the Oaked QT Old Fashioned that’s pre-made and aged for seven days in a charred oak Pinocchio wine bottle. Featuring Woodford Reserve Bourbon, vanilla sugar syrup, orange and Angostura bitters, the new Old Fashioned is ideal for the more classically geared.

Indulge in some sweet, fruity goodness with the Liquid Gold, a pleasurable pop of peach and cinnamon-infused Buffalo Trace Bourbon, lemon squeeze, egg white, Umami bitters, fresh pollen and QT’s very own honey harvested from our thriving rooftop garden.

Presenting more like a meal within and drink and catering to the savoury palate is the punchy Ghost of Mary, which sees Pancetta and Jalapeno-infused Vodka teamed with tomato consommé and celery bitters, with a side of dehydrated Pancetta.

Ranking highly among Gilt’s elite guest list is the Spiced Apple Sour, the perfect balance of Bombay Sapphire Gin, homemade Ginger and Clove syrup, fresh apple juice, lemon and a dash egg white. Shaken, not stirred.

The relaxed sophistication of the 60-seat cocktail bar on level 2 of the historic Gowings building is both refined and intimate. The vivid interior, by acclaimed designer Nic Graham, uses bespoke furniture and digital art by Daniel Boyd to deliver a distinctive, retro-futuristic ambience. Unique glimpses of the city are visible through the windows as music infuses, rather than dominates, the space for a laidback, loungey vibe.
