New Eats At Stingray

We’re bringing the fire when it comes to freshness and flavour.

Stingray Lounge has shaken things up with a standout sexy line-up that is sure to excite the eye and please your palate. We’ve got a new menu that’s based around locally sourced, sustainable and humanely farmed meat and produce, and we’re pretty damn chuffed about it. Some of the fresh produce is from our very own organic rooftop garden; think edible flowers, micro-herbs, chillies, tomatoes and honey sourced literally a few metres away. We are bringing sexy back… and freshness back.

Tempted? You should be. Here’s a few newbies to make you drool.

Local Crab

How does this sound? Local Crab with sweet corn orzo, shichimi pepper, young coriander. Should you be feeling fancy, we suggest coupling it with our house-pour Champagne Perrier-Jouet. Life doesn’t get any better than this.

Roast Beet Salad

This epic Roast Beet Salad is loaded with roast beetroot, rosemary goat’s curd, compressed pear, brioche and hazelnut crumble. This salad is best consumed outdoors whilst soaking up the sunshine on the poolside Calypso Terrace. GET IN!

Wagyu Cheeseburger

The Wagyu Cheeseburger is decked out with American cheddar, greens, pickles, our very own bacon secret sauce placed together on a milk bun. We recommend pairing this badboy with an ice cold Stone and Wood Pale Ale hand sourced locally from Byron Bay.

JD Hickory Smoked Short Rib

Yum – JD Hickory Smoked Short Rib with flatbread and house ricotta and soused onion. This bad boy fits in perfectly served straight up – no mucking around, just sit down and gorge.

Are cocktails more your style? Skip dinner (actually, maybe don’t) and head straight for our sexy new cocktail list.

With a new menu and new cocktail list, Stingray now has new trading times: Monday to Friday, we are opened from 4pm – 12am. On Saturday and Sunday we like to live it up a little with opening times from 12pm to 12am.
